Carmel was founded in 1882 by Baron Edmond de Rothschild, owner of Château Lafite in Bordeaux. The main winery operations are situated in Zichron Ya'acov, on the southern slopes of Mount Carmel overlooking the Mediterranean Sea. Carmel also owns two small state-of-the-art wineries, situated close to key vineyards: Kayoumi Winery in the Upper Galilee and Yatir Winery in the Northeastern Negev.
Carmel has vineyards from the Galilee to the Negev and is therefore able to cherry pick from the finest terroirs in Israel. The winery is particularly strongly represented in the Upper Galilee, source of many of Carmel's finest wines.
Carmel's wines range from the prestigious Carmel Limited Edition and Carmel Mediterranean, two of Israel's finest wines, to Selected, Israel's largest selling brand. The main labels are Carmel Single Vineyard, Carmel Vineyards, Appellation, Private Collection and Selected.
Carmel Winery's chief winemaker is Lior Lacser. He graduated in Beaune, France, and followed this by gaining valuable work experience in Burgundy, Bordeaux and Australia. He joined Carmel in 2003 and has overseen the quality revolution that has taken place since.
