This wine is a unique blend of Cabernet from five different "terroirs", which produce an elegant wine, with aromas of cherry, cassis and black fruit with a dash of vanilla, black pepper and toasted wood. The wine has a full round flavour with soft tannins and a long, pleasurable finish.
This wine was produced from 90% Cabernet Sauvignon grapes taken from five
different vineyards (Alma, Karmey Yosef, Tzivon, Kfar Yuval and Mata) in equal quantity, with the addition of Cabernet Franc and Petit Verdot. The grapes were hand-picked during harvest time and when arrived to the winery, each grape was sorted in order to enter only the prime grapes to the wine-making process.
Pre-fermentation, the grapes went through cold maceration for a few days, in order to attain deep colour and aroma.
The grapes went through alcoholic fermentation for two weeks and rested atop the grape skins for an additional number of days. Then the wine went through a light press. Only the free run liquid was transferred for a second fermentation. The wine was aged for 18 months in French oak barrels and remained in the ageing room for an additional number of months before being marketed.
