Sauvignon Blanc is a grape variety which displays unique characteristics in the Israeli climate.
During the growing season the winery’s vineyards were
treated with dedication and devotion to reach maximum
quality levels. Beginning in the winter with precise
pruning, our detailed measures, such as shoot and cluster
thinning as well as precise irrigation, are quite evident in
the quality of the grapes. The Sauvignon Blanc was
harvested at its optimal ripeness at the end of July. Due to
the vineyard’s proximity to the winery, the grapes were
received during early morning hours while they were cool
and fresh. The grapes were gently pressed and the clear
must went through a long cold fermentation avoiding
contact with wood to retain the delicate fruit flavours typical
of the Sauvignon Blanc variety.
This Sauvignon Blanc plot is 30 years old and is one of
the country’s older vineyard blocks. This plot receives
extra care and attention. The vineyard is planted in rich
chalky soil in the Kfar Tabor area and its old, gobletshaped
vines are treated with meticulously with limited
irrigation. These low-yielding vines produce the best
Sauvignon Blanc in the country. This warm region is
unique to growing Sauvignon Blanc and is the main factor
influencing the richness in flavour of this particular wine.
