Carefully handselected and harvested from our own best plots in the upper Galilee and the Jerusalem mountains, the Flam Noble 2010 is a blend of 84% Cabernet Sauvignon, 5% Merlot, 5% Cabernet Franc and 6% Petit Verdot.
Following a scorchingly hot, dry August, the 2010 harvest began three weeks earlier than usual, yielding a small but concentrated crop of plump, ripe grapes.
At the winery, the grapes are rigorously hand sorted, destemmed, and crushed. The fermentation takes place in stainless steel, temperature-controlled vats 26-30 C° for 20 days. During this time period, regular remontage takes place. The wine is then pressed, left to clarify naturally, and moved to the cellars for aging.
The wine is aged in exclusively new French oak. Each varietal ages separately for a year before being blended. The blend then spends 10 months in oak. After bottling, the wine is aged for yet an additional 24 months in our cellars.
Delicately perfumed, the aroma is of full ripe fruit complemented by gentle, oak and spice. The palate is rich with fruit: bright, concentrated, yet balanced by a lively fresh acidity. Tannins are well-rounded, giving way to a long complex finish.
