The grapes used to produce Alfasi Late Harvest Sauvignon Blanc are from the Fundo Florencia and Porvenir vineyards in Villa Alegre, located in Chile’s Maule Valley. The grapes are harvested in late May (since Chile is in the southern hemisphere, the grape harvest season coincides with spring, as opposed to the northern hemisphere when the grape harvest coincides with the fall season) and are transported to our cellars in small loads to avoid bruising.
During the roughly 15 days of fermentation, all the desirable characteristics of this varietal develop, including its aromas, flavours, and colour. In order to further develop, or “round out” the wine, it is aged for 8 months in French oak barrels. Once the flavour has reached its peak, the wine is bottled and stored in our cellars for 8 additional months.
Pretty golden yellow colour. Expressive notes of dry apricots, figs, and a sweet perfume of honey. In the mouth it is balanced with good acidity. Moderately persistent with a sweet finish.
