Varietals: The Cabernet Reserve is a blend of 85% Cabernet Sauvignon, 9% Merlot, 3% Petit Verdot and 3% Cabernet Franc sourced from our very best of plots in the Dishon & Ben-Zimra vineyards (Upper Galilee) and Mata (Judean Hills).
Vinification: At the winery the grapes are destemmed then cold macerated for 48 hours. The fermentation takes place int he stainless steel temperature controlled tanks at 26-28 degrees for 12 days with regular remontage in order to extract colour, aromas and varietal character. The wine is then pressed, left to clarify naturally and moved to our cellars for ageing.
Maturation: The wine ages in French oak barrels of which 60% are new at the rest one to two years old. Each varietal ages separately for 16 months, after which the final blend takes place. After bottling the wine is aged for an additional 10 months in our cellars.

Soft ripe fruit on the nose complimented by elegant oak spice and a hint of minerality. The palate is generous and balanced with ripe fruit, soft spice and a good tannic structure. The finish is mineral, complex and long.
This Wine matches well with a Lamb shoulder marinated with Rosemary, Tyme, and Hibiscus. (Best served with full flavoured dishes, roasts, grilled meats, cold cuts, mediterranean dishes, strong cheeses.)
