Acidity:
Harvest date in October. After a field manual selection, the grapes were stripped and pressed, going through a peristaltic pump to 9.000 kg tanks. Controlled temp. fermentation at 26ºC. Taken from the cask after 16 days of maceration, discarding the wine from the press. Aged 30 months in new and 2 years old oak barrels (70%) American and (30%) French. Bottled in June 2017.
