The grapes were handpicked into small containers without compression and sorted carefully. The wine then went through a delicate soaking process to extract aroma and color, was gently pressed and transferred into a cold, mild fermentation. Each varietal was aged separately for 18 months. After mixing the different varietals, the wine rested in barrels for two additional months until it was bottled.
