Psagot is located in the Benjamin mountains. While planting vineyards and orchards an opening was discovered which led the family to an amazing cave from the period of the Second Temple. We harvested the grapes for this wine a bit early to maintain vibrance/fresh fruit. The different parcels were fermented separately, blended/then spent 8 months aging with Franch oak staves. Then the wine was raked, filtered/bottled.
